Marc Frederic, tutor for this course, shows how lamb can be an incredibly versatile meat. When people think of Charcuterie, they think of all the things one can do with pork, but lamb can be processed in many different ways too. This course starts with a demonstration of lamb butchery. Then Marc shows everybody how they can process the meat, making interesting and unusual products such as lamb bacon and ham, Merguez sausages, pate and more.Marc will also teach you how to cook lamb and make use of some of the cheap but flavoursome cuts. If you produce your own lamb, this course will help you add value to your products. Administration The numbers on these days are limited to 10 - 12 people so that everybody can see what is going on and ask questions. Most of the day takes place in the butchery which is not heated so warm clothing and thick socks are needed! We provide protective clothing.
