| One of our favourite cures for gammon is cider and black treacle. Our organic pork is submerged in the wet cure for three weeks and then removed and allowed to air dry for a couple of days. We use the best ingredients - organic cider, black treacle, organic herbs and spices and sea salt. These gammons are available for Christmas delivery only. They are suplied vacuum packed so the meat will keep in a fridge for 14 days. We provide full cooking instructions. Please note that the cure contains a permitted preservative which we add to prevent the growth of the harmful bacteria that cause botulism.Although our meat is organic, the label will not bear an SA logo as we have not added this product to our organic schedule. | |
